Celebrate National Taco Day on Taco Tuesday!
For the first time in seven years, National Taco Day falls on Taco Tuesday, October 5. How righteous is that?! And while you may think you don’t need a recipe to make a tasty taco, we found dozens that you may never have tried. Because as it happens, just about anything can be tucked into a tortilla – flour or corn, soft or crispy. Here are a few easy, gourmet and unexpected recipes to make next Tuesday the taco treat-iest.
From the Gourmet Gurus
It’s handy to have a little help as you plot your next taco night, and these 49 gourmet recipes are all winners from Epicurious’ favorite taco recipe collection. You’ll find lots to please your palate, from the Perfect Fish Taco, and Breakfast Tacos with homemade chorizo, to Chipotle-Orange Pork tacos (from the slow cooker) and a spectacular take on vegetarian tacos filles with crispy, savory pulled mushrooms – complete with a how-to pull them!
And while the expected fillings are all here, from pork, chicken, beef – ground and steak and even kielbasa, to beans (black and refried) and a variety of salsas, you’ll also scroll to and through several super flavorful and textured vegan options. If you like veggies, you’ll like these — from Butternut Squash, Kale and Pepitas Tacos and Brussels Sprout Tacos with Spicy Peanut Butter to Papas con Rajas, which are tacos stuffed with potatoes, onions, and roasted poblano chiles.
Down Home and Downright Delish
While Taste of Home is known for its tasty recipes that appeal to all ages and palates, this is especially true of these options that take traditional taco recipes and add ingredients you wouldn’t normally include. For example these Shrimp and Spinach Tacos, have ricotta mixed with cilantro and garlic. And the Chicken Taco Pockets are like taco-flavored sandwiches stuffed into crescent dough. They’re a quick and easy meal for lunch or dinner, with a bowl of soup or small salad. And cut into small servings, they make great finger foods for parties!
You may prefer the Bourbon Barbecue Chicken Tacos better, or the Tacos on a Stick, or Easy Taco Cups. All 29 recipes will likely make it to your favorites file for Taco Tuesday – not just next week but all year round!
Rachel Ray’s Trusty Tacos
We not only love Raechel Ray’s genuine and relatable style, but her recipes are the bomb. Take for example Rachel’s Buffalo Chicken Tacos. For anyone who thinks Frank’s Redhot Buffalo Wings Sauce is an essential kitchen condiment, her combination of chicken, hot sauce and blue cheese is hard to beat. You’ll also find Pork Tacos with Sriracha Crema & Green Salsa, Spicy Shrimp Tacos and Chile & Cheese Tacos with creamed chiles and pepitas – and don’t forget the sliced limes!
There are Chicken-Chorizo and Surf n’ Turf (Red Snapper and Skirt Steak) combinations, plus a few more seafood options, like the Tilapia Fajitas with Chimichurri & Saffron Rice, and Sauteed Fish Tacos with brown sugar.
And finally, the Cookie Rookie breaks down everything you need to know to host a Taco Tuesday Party, from how to make some of the best toppings and fillings, to keeping tortillas warm and what to serve for dessert.
