Hearty Breakfast Recipes to Fuel You Day!

Mama said breakfast is the most important meal of the day, and Web M.D. agrees. Breakfast kick-starts your metabolism, helps you burn calories through the day and gives you energy to get things done and focus – at work or at school. For that reason, and because it’s also our favorite meal of the day, we rounded up some tasty breakfast recipe ideas to fuel your activities for wherever the day takes you!

Breakfast Quesadillas and Tostadas 

Easy to customize, easy to make this idea for Breakfast Quesadillas is a no-brainer. It can be the classic eggs-n-bacon or sizzle with jalapenos and salsa – depending on your mood. Just scramble some eggs, and whatever other breakfast meat/protein you favor, peppers and melty cheese, load it all into a tortilla and crisp both sides on a griddle.

Pumpkin ‘n’ Spice likes to make these for dinner and has a video to walk you through the crisping process! Dad with a Pan likes his scrambled eggs wedged into a grilled cheese sandwich. Follow his tips to making the cheese melt faster – they’re genius!

Kate, at Cookie and Kate, loves Mexican cuisine and says she got the inspiration for this recipe from a local tavern. She uses mini corn tortillas and crisps them, then piles on refried beans, sharp cheddar, fried eggs and plenty of salsa, avocado, crumbled Cotijah, with a little hot sauce on the side. 

Big Batches and Breakfast Casseroles

Sweet Peas and Saffron breaks out an instant pot every now and again for a whopping big batch of steel cut oats, jazzed up with all kinds of flavors. Blogger Denise collects recipes for busy people with many to make ahead when you have time and are fully awake and not a walking pre-dawn zombie. Check them out: Maple Apple, Pumpkin; Coconut Lime, Chocolate PB, Lemon Blueberry, Strawberry Chai and Chocolate Chip Zucchini Bread. Denise’s recipe makes a big batch and put it in the fridge to pull out and reheat for two more consecutive days.

Kristin who blogs at A Mind “Full” Mom creates recipes for real families. Her easy Hashbrown Breakfast Casserole is made with frozen hashbrowns, eggs, sausage and cheese. It’s a crowd-pleasing, allergy-friendly concoction and can be made the night before or morning of – with or without cinnamon rolls. For those with no gluten sensitivities! 

Martha Stewart has a Shiitake and Egg Tart on puff pastry and topped with chopped tarragon for meatless Mondays and Real Simple combines breakfast sausage, onions peppers and hot sauce (optional) with eggs, lots of cheese and 32-ounces of potato tots for another palate-pleasing casserole that serves eight.

Flavorful and Fiber Rich

These are also super-easy and customizable – overnight breakfast grains from Better Homes and Gardens to make your mornings healthy, flavorful and full of fiber! No need to wait till dinner to satisfy a sweet tooth when you can wake up and start your day with Carrot Cake Refrigerator Oatmeal! Shredded carrots and walnuts add crunch, and the sweet comes from maple syrup and cinnamon. 

With only a little prep time, you can have breakfast ready to go for days in the form of fruit, nut, and brown sugar oatmeal cups. Spoon out the oats mixture into muffin cups, freeze them overnight, then pop one in the microwave when you need a fast breakfast. These will keep in the freezer up to six months.

Better Homes and Gardens also has a slew of stick-to-your-ribs, protein-packed breakfasts like Sweet Potato Biscuit Sandwiches with Ham and Redeye Gravy and Biscuit and Gravy with fried chicken, fried eggs and sausage gravy. If you know somebody with a lumberjack-sized appetite!

Fun for Everybody

Here’s a simple premise, scoop out the insides of a bagel, fill each half with an eggy mixture with crumbled bacon or cooked sausage bits and bake until set. Yep, it’s the Bagel Quiche recipe from Grace Elkus at Real Simple. And it is – real simple! Veggies in the filling are great – sliced pepper, shallots, scallions, mushrooms, etc., plus some fresh herbs like dill sprigs or chopped chives. The secret is to make sure the filing is thick – and since the recipe calls for generous amounts of shredded cheese plus sour cream, that helps!

And for 28 days of pancake recipes, from cloud pancakes, stuffed with peanut butter cakes, Brown-Butter Dutch Baby to silver dollar sized pancakes, Martha Stewart delivers the best, baked, browned and griddled for every sweet and savory preference.

But the easiest breakfast has to be the one you order from the 50-year-old Castle Rock favorite, the B&B Café at 324 Wilcox Street. Serving down-home breakfasts that everyone loves (just check out their Yelp reviews!) the B&B Café is open weekdays at 6:00 a.m. and weekends at 7:00 a.m.
